Thomas’ Nooks & Crannies Bagel w/ Avocado & Egg

I am not a huge breakfast person. It usually is an afterthought because mornings with 4 kids are super busy. I tend to grab something quick if I remember. Since the kids had no school today and I had some extra time, I could not resist putting avocado & egg on these Thomas’ Nooks & Crannies bagels for breakfast this morning.

Thomas' Nooks & Crannies Bagel w/ Avocado & Egg

Thomas’ brand has a nooks and crannies bagel that I just love! It is the lovechild of their bagels and English muffins and is absolutely amazing! It is light and airy but still has that bagel flavor to it. I usually toast it with sunbutter or cream cheese but this morning I went for something different. I did a mashed avocado & an egg on top. It was like avocado toast but way better than just plain bread! Now in the photo, my eggs are cooked over hard, because I can’t stand runny yolks, but obviously cook your eggs to your liking!

  • 1 Thomas' Nooks & Crannies Bagel
  • 2 large eggs
  • 1 small avocado
  • 1 spray nonstick cooking spray
  • dash salt & pepper
  1. Slice the Thomas’ Nooks & Crannies bagel & lightly toast them.

  2. Halve & scoop out the avocado, mashing 1/2 avocado onto each piece of the bagel



  3. Meanwhile, spray nonstick cooking spray in skillet & cook eggs to desired doneness. Place cooked eggs on top of mashed avocado. Enjoy!
